spinach salad with strawberry balsamic vinaigrette
My favorite greens are spinach and arugula mixed. Both that or spinach on its own work well for this. You can substitute crumbled Feta or blue cheese for the goat cheese.

-
Step 3Garnish with some fresh strawberries if available.
-
Step 4To make a small quantity of strawberry puree - in a blender, combine 1 cup strawberries, 1 tablespoon sugar and 1/4 teaspoon lemon juice. To remove those pesky seeds, strain through mesh strainer. Leftovers can easily be frozen.
