Ingredients

  • 16 ounces bacon
  • 12 ounces fresh spinach
  • 3 ounces parmesan cheese
  • 1 1/2 cups sliced mushrooms
  • 1 1/2 cups garlic and onion croutons
  • 1 - egg, beaten
  • 1/2 cup water
  • 1/3 cup sugar
  • 1/4 cup vinegar
  • 1/8 teaspoon pepper

  • Step 1
    Cut bacon into 1" pieces. Cook until crisp. Drain, reserve 1/4 c drippings in skillet. Stir in egg, water, sugar, vinegar and pepper, simmer 10 min. Toss torn spinach, bacon, cheese, mushrooms and croutons. Pour dressing on top. Toss and serve immediately.
