Delicious salad for spinach lovers. Good for a pot luck or family get-together. Eight hours of chilling time is not included in the prep and cook time.

Ingredients

  • 8 cups spinach, torn
  • 1/2 cup cheddar cheese shredded (2 ounces)
  • 1/2 cup swiss cheese, shredded (2 ounces)
  • 2 cups fresh mushrooms, sliced
  • 4 - hard boiled eggs, sliced
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 3 tablespoons milk
  • 2 teaspoons lemon juice
  • 2 teaspoons sugar
  • 1/4 cup green onions, finely chopped
  • 4 slices bacon, cooked and crumbled

How To Make spinach make-ahead salad

  • Step 1
    Layer the first five ingredients in order in a large glass salad bowl.
  • Step 2
    Combine the mayonnaise, sour cream, milk, juice, and sugar. Add the onions, stirring well. Spread the mixture over the salad, sealing to the edge of the bowl.
  • Step 3
    Cover and chill for 8 hours. Sprinkle with the bacon just before serving.
