With a tasty combination of ingredients, this salad is easy to make and healthy too!

Ingredients

  • VINAIGRETTE
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon Dijon mustard
  • ground Himalayan pink salt, to taste
  • freshly ground mixed peppercorns, to taste
  • SALAD
  • 1 large apple such as Royal Gala, washed, cored and cubed
  • 3 to 4 tablespoons freshly squeezed lemon juice, or as needed and divided
  • 1 large avocado, stone removed, peeled and cubed
  • 6 ounces baby spinach
  • 1/2 cup Cotija cheese (substitute Feta cheese), crumbled
  • 1/4 cup red onions, finely chopped
  • 1/2 cup toasted walnuts, roughly chopped

How To Make spinach apple salad

  • Step 1
    In a small container, combine all the vinaigrette ingredients. Place the lid and shake vigorously until well blended. Transfer to the fridge for at least 30 minutes or until ready to use.
  • Step 2
    Place apple and avocado cubes in two different bowls before drizzling lemon juice; toss to coat.
  • Step 3
    To assemble the salad… In a large bowl, add baby spinach, apple and avocado cubes, Cotija cheese, red onions, and toasted walnuts. Gently toss the ingredients until nicely mixed.
  • Step 4
    Shake vinaigrette before pouring over the salad. Serve immediately.
