southwest salad
I really love the combination of fresh ingredients in this salad. It's great for a hot summer day when chilled foods are so appealing. It's quite delicious as written, but I like to top the salad with diced fresh avocado, but another option is to sprinkle crushed tortilla chips on top. It's filling enough that we usually enjoy this as a main dish. But obviously, it'll serve a larger crowd if you serve it as a side salad.

- 1/2 cup chili-lime tortilla strips (I use half of a 3.5-oz bag "Fresh Gourmet" brand southwest flavored tortilla salad toppers)

- 1 fresh medium lime, cut into 4 wedges, for serving, optional
How To Make southwest salad
-
Step 1In a large salad bowl, whisk together the sour cream, salsa, lime juice, cumin, garlic powder, onion powder, salt and pepper. (The dressing can be made in advance, transferred to an air-tight container, and kept in the refrigerator for up to 3 days.)
-
Step 2Add the lettuce, tomatoes, chicken, corn, black beans, onion and tortilla strips. Toss until well distributed. If not serving immediately, cover bowl and keep in refrigerator until serving time.
-
Step 3Divide the salad among 4 individual salad plates. Sprinkle cheese and diced avocado on top. Add a lime wedge to each portion, and serve chilled.
