Ingredients
- SALAD
- 1 pound cooked shrimp
- 2 heads romaine lettuce
- 1 cup shredded or shaved Parmesan cheese
- DUCK FAT CROUTONS
- 4 slices rustic rye bread, crust removed and cut into chunks
- 1/4 cup duck fat
- salt
- CAESAR DRESSING
- 1 cup mayo
- 1/2 cup grated Parmesan cheese
- 3 tablespoons lemon juice
- 6 oil packed anchovies
- 2 dashes garlic minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- salt and pepper
How To Make shrimp caesar salad with duck fat croutons

Step 1Make the dressing. Place all ingredients in a food processor and process until well incorporated and creamy. Taste and adjust salt and pepper.

Step 2Make the croutons. Place the duck fat in a frying pan. Once hot, add the croutons and cook, turning until all sides are browned. Do in batches if needed.

Step 3Place on a paper towel-lined plate and season with salt.

Step 4Chop the Romaine lettuce and place it on 4 plates. Top with Parmesan cheese and shrimp.

Step 5Drizzle dressing over top and top with the duck fat croutons.
