1In large salad bowl, mix 3 Tbsp. of the Parmesan cheese,the olive oil, lemon juice, dry mustard, pepper, garlic and salt. Top with salad greens. If desired, add your choice of croutons, goat cheese, walnuts, and balsamic vinegar. Toss well. Sprinkle with remaining Parmesan cheese. Serve at once. Makes 8 to 10 side dish servings.
