roasted blueberry and mango salad

Fantastic salad bursting with flavors! I get asked for this salad over and over, everyone loves it. Its juicy enough that you don't need dressing added to it. If you want to make it a main meal, add some grilled salmon to it! Definite crowd pleaser.

Ingredients For roasted blueberry and mango salad

  • 18 oz
    blueberries
  • 4 oz
    crumbled blue cheese
  • 1
    mango
  • 7 oz
    honey toasted pecans
  • 10 oz
    spring/field greens
  • 1 pinch
    sugar

How To Make roasted blueberry and mango salad

    Preheat oven to 375. Spread blueberries on cookie sheet lined with foil. Sprinkle liberally with sugar. Bake for 15 minutes, turning them after 5. Take out and let cool.

    Dice mango or buy one already cut up. In large bowl, combine mango and cheese. Then top with the cooled blueberries, then sprinkle the pecans on top.
