This recipe was personally prepared by Marian De Snyder for the July 2015 curious Cuisiners meeting. Though no number of servings was noted in the recipe, it made a very large bowlful and served a lot.

Ingredients
- 5 cups fresh kale, finely chopped
- 1 cup quinoa
- 2-1/4 clove chicken stock or broth
- 1/2 cup caesar salad dressing
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/2 cup crumbled feta cheese
How To Make quinoa kale salad

Step 1In large stockpot, bring quinoa and chicken stock to a boil. Reduce heat to low and simmer for 15 minutes.

Step 2Remove stems from kale and chop leaves. Stir kale into hot quinoa and cover; cook eight more minutes.

Step 3Transfer to a large serving bowl, fluff with a fork and let stand to cool. Stir in 1/4 cup dressing, salt and pepper. Sprinkle remaining dressing over top, sprinkle with cheese and serve.
