This recipe was personally prepared by Marian De Snyder for the July 2015 curious Cuisiners meeting.

Though no number of servings was noted in the recipe, it made a very large bowlful and served a lot.

Ingredients

5 c
fresh kale, finely chopped
1 c
quinoa
2-1/4 clove
chicken stock or broth
1/2 c
caesar salad dressing
1/4 tsp
kosher salt
1/4 tsp
pepper
1/2 c
crumbled feta cheese

How to Make QUINOA KALE SALAD

Step-by-Step

  • 1In large stockpot, bring quinoa and chicken stock to a boil. Reduce heat to low and simmer for 15 minutes.
  • 2Remove stems from kale and chop leaves. Stir kale into hot quinoa and cover; cook eight more minutes.
  • 3Transfer to a large serving bowl, fluff with a fork and let stand to cool. Stir in 1/4 cup dressing, salt and pepper.

    Sprinkle remaining dressing over top, sprinkle with cheese and serve.
