qdoba salad
I love Qdoba's salad and have made them at home using purchased guacamole, pico de gallo and corn and bean salsa. I sometimes use less chips and cheese to lighten the calories.

Ingredients
- 1/4 cup sliced green peppers
- 2 tablespoons diced onions
- 1 teaspoon olive oil
- 2 cups chopped romaine lettuce
- 1/4 cup black beans
- 1 tablespoon pico de gallo or favorite salsa
- 1 tablespoon corn and black bean salsa
- 1 tablespoon shredded cheese, optional
- 2 tablespoons cilantro
- 1 1/2 ounces guacamole
- 1/2 ounce tortilla chips, crumbled
- 1 teaspoon lime juice, to serve
How To Make qdoba salad

Step 1Saute peppers and onions in oil until softened.

Step 2In a large salad bowl, add lettuce, veggies, beans, and salsas. Add shredded cheese, if using.

Step 3Top with cilantro, guacamole and crushed chips.

Step 4Add a splash of lime juice to serve.
