panzenella w/strawberry vinegarette

How easy is a panzenella salad to put together? I was just recently asked for this recipe. After a long illness of a dear sweet women, At the end of last summer I put together a pasta dish and a salad to bring to her and her family. When going to put the salad together I realized I had ate the romain the day before. So searching thru my refrigerator I only had these beautiful yellow and red cherry tomatoes. Thats when it hit me ok panzenella! Well she recently passed, But her daughter asked for recipe. I usually dont write salad recipes down,I also used her strawberry jam for vinegarette!

Ingredients

  • 2 - pints cherry tomatoes
  • 4 cups croutons
  • 1 - red onion
  • 20 - basil stems
  • 1/3-1/2 cup balsamic vinegarette dressing

How To Make panzenella w/strawberry vinegarette

  • Step 1
    Cube bread. put on bakeing sheet drizzle with olive oil s&p and garlic powder and toast in oven for 10 min.
  • Step 2
    Slice tomatoes in half. Slice red onions, and tear basil leaves. Add to croutons, toss with dressing, cover and refrigerate for 30minutes before serving.
  • Step 3
    VINEGARETTE 1/4c canola oil 1/4c white balsamic 1/2tsp strawberry jam pinches of S&P
