orange avocado salad

This is just a easy go-to recipe for a nice festive salad. You can substitute grapefruit sections for the oranges if desired. Since making a vinaigrette is so easy, I don't understand why people have a refrigerator shelf filled with bottles of commercial salad dressings laden with chemicals. As a cancer survivor, I try to avoid chemicals and toxic food components.

Ingredients

  • DRESSING
  • 1/2 cup canola oil
  • 1 1/2 teaspoons orange zest
  • 1/4 cup orange juice
  • 1 1/2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons white vinegar
  • 4 teaspoons sugar
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • SALAD
  • 2 - oranges sectioned or 2 small cans of mandarin ornages
  • 1 - small red onion sliced
  • 1 - avocado sliced or chunked
  • 8 cups torn lettuce of your choice. i use romaine

How To Make orange avocado salad

  • Step 1
    mix dressing ingredients until sugar is dissolved.
  • Step 2
    Add orange sections and red onion and marinate several hours or over night
  • Step 3
    Drain orange mixture and save the dressing marinade
  • Step 4
    Put salad greens and avocado in a bowl along with oranges and onion. Toss with dressing and serve.
