Ingredients

  • 8 ounces log of goat cheese or 10 oz
  • 2 cups baby arugula
  • 2 cups baby kale
  • 6 large tomatoes chopped
  • 1 small red onion sliced
  • 1 cup basil chiffonade
  • 1/4 cup tarragon vinegar or red wine vinegar
  • 1/3 cup olive oil
  • salt

How To Make mixed greens & tomato salad with warm goat cheese

  • Step 1
    Preheat oven 375 degrees. Place the goat cheese in a baking dish and bake 8 to 10 minutes until hot and oozy.
  • Step 2
    Mix the vinegar, oil and salt together. Mix the arugula, kale and red onion together. Dress the greens with the vinegar mixture. Top with the tomatoes, basil and a dollop of the warm goat cheese. Serve immediately.
