Ingredients
- 2 ounces italian bread, cut in 1/2 inch cubes
- 3 tablespoons reduced fat mayonnaise
- 2 tablespoons fresh squeezed lemon juice
- 2 tablespoons reduced sodium chicken broth
- 1 teaspoon anchovy paste
- 1/2 teaspoon freshly ground black pepper
- 8 cups torn romaine lettuce
- 1 can 15 oz. can red kidney beans, rinsed and drained
- 1/4 cup parmesan cheese, grated
How To Make low fat-no egg caesar salad & dressing

Step 1In the oven, under broil, toast the bread cubes for approx. 1 minute or until golden.

Step 2In a large bowl, make the dressing by combining the mayonnaise, lemon juice, broth, anchovy paste and 1/4 tsp. pepper - whisk until emulsified.

Step 3Add the lettuce, beans, bread and parmesan -- toss to coat the salad thoroughly with the dressing. Sprinkle with remaining 1/4 tsp. pepper and serve.
