Kitty's Watercress Salad

While flipping the channels one day I saw a chef demonstration of how to properly cut, peel and chop an avocado. He also demonstrated how to use a special tool to get all the juice from a lemon. While fascinated with the chef's technique I ended up with a great recipe to share! Watercress salad. And this one could not be healthier!

Ingredients

  • SALAD
  •  
    fresh watercress
  •   1
    avocado, sliced or cubed
  •   6
    radishes
  • DRESSING
  •   1/2
    lemon, juiced
  •  
    olive oil
  •  
    salt and pepper

How To Make

    Place watercress in a bowl
  • 2
    Add sliced radishes and cubed avocados
  • 3
    Make dressing with olive oil, lemon juice, salt and pepper to equal 1/4 cup of dressing
  • 4
    Chill salad until ready to serve then drizzle dressing over top. A good healthy salad. Even Dr. OZ agrees!
