Blue Ribbon Recipe
This is a tasty twist on a classic layered salad. It has a Tex-Mex feel thanks to the cilantro and salsa in the dressing. Black beans and corn add a ton of flavor and texture. We liked the creaminess of the avocado chunks. It also features slices of hard-boiled eggs and chopped tomatoes. All of this is put on a bed of romaine lettuce. A great dish for a potluck or cookout.

Ingredients
- 8 cups shredded romaine
- 8 large hard-boiled eggs, sliced
- 3 1/2 cups cherry tomatoes, quartered
- 2 cans corn, drained (11 oz each)
- 1 can black beans, rinsed and drained (16 oz)
- 1/2 cup thinly sliced green onions
- 2 medium avocados, peeled and diced
- 1 tablespoon lime juice
- shredded cheddar cheese, for garnish
- sliced black olives, for garnish
- CILANTRO DRESSING
- 1 1/2 cups mayonnaise
- 2/3 cup salsa, your favorite
- 2 tablespoons lime juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1 1/4 cups minced fresh cilantro
How To Make kicked up layered salad

Step 1Place the romaine in a large salad bowl.

Step 2Arrange the egg slices on top.

Step 3Top with quartered tomatoes.

Step 4Mix the corn, beans, and onions.

Step 5Spoon the corn mixture on top of the tomatoes.

Step 6Toss the avocados with lime juice.

Step 7Layer the avocados on top of the corn mixture.

Step 8For dressing, in a bowl, mix the mayo, salsa, lime juice, cumin, and chili powder. Stir in cilantro.

Step 9Spoon over avocados, spreading to the sides of the bowl.

Step 10You can garnish with olives and cheese if you want.
