This is such a filling salad. You can substitute low-fat ingredients. It's healthy too.

Blue Ribbon Recipe

This is a tasty twist on a classic layered salad. It has a Tex-Mex feel thanks to the cilantro and salsa in the dressing. Black beans and corn add a ton of flavor and texture. We liked the creaminess of the avocado chunks. It also features slices of hard-boiled eggs and chopped tomatoes. All of this is put on a bed of romaine lettuce. A great dish for a potluck or cookout.

Ingredients

  • 8 cups shredded romaine
  • 8 large hard-boiled eggs, sliced
  • 3 1/2 cups cherry tomatoes, quartered
  • 2 cans corn, drained (11 oz each)
  • 1 can black beans, rinsed and drained (16 oz)
  • 1/2 cup thinly sliced green onions
  • 2 medium avocados, peeled and diced
  • 1 tablespoon lime juice
  • shredded cheddar cheese, for garnish
  • sliced black olives, for garnish
  • CILANTRO DRESSING
  • 1 1/2 cups mayonnaise
  • 2/3 cup salsa, your favorite
  • 2 tablespoons lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 1/4 cups minced fresh cilantro

How To Make kicked up layered salad

  • Place the romaine salad in a large serving bowl.
    Step 1
    Place the romaine in a large salad bowl.
  • Arrange the hard-boiled sliced eggs.
    Step 2
    Arrange the egg slices on top.
  • Top with tomatoes.
    Step 3
    Top with quartered tomatoes.
  • Mix corn, beans, and onions.
    Step 4
    Mix the corn, beans, and onions.
  • Add corn mixture to the bowl.
    Step 5
    Spoon the corn mixture on top of the tomatoes.
  • Toss the avocados in lime juice.

    Toss the avocados with lime juice.
  • Add avocados to the bowl.

    Layer the avocados on top of the corn mixture.
  • Mix mayo, salsa, lime juice, cumin, chili powder, and cilantro for the dressing.
    Step 8
    For dressing, in a bowl, mix the mayo, salsa, lime juice, cumin, and chili powder. Stir in cilantro.
  • Spread over the avocados.
    Step 9
    Spoon over avocados, spreading to the sides of the bowl.
  • Garnish with cheese.
    Step 10
    You can garnish with olives and cheese if you want.
