Ingredients For kathleen's salad

  • 1/2 c
    pecans
  • 2 Tbsp
    sugar
  • 1 bag
    romaine & leaf lettuce (about 6 cups)
  • 1 can
    (11 oz) mandarin oranges, drained
  • 1/2 c
    dried cranberries
  • 1/3 c
    red onion, thinly sliced
  • CRANBERRY VINAGRETTE
  • 1/3 c
    olive oil
  • 3 Tbsp
    cranberry flavored white wine vinegar
  • 2 Tbsp
    sugar
  • 1 tsp
    dijon mustard
  • 1/4 tsp
    salt

How To Make kathleen's salad

  • 1
    Combine vinagrette ingredients in a container with a lid. Shake well.

    Heat pecans and sugar in a skillet over medium heat about 5 minutes, stirring constantly, until sugar begins to caramelize. Let cool, break apart.

    Toss dressing with remaining ingredients. Sprinkle with pecans.
