Ingredients
- 1/2 cup pecans
- 2 tablespoons sugar
- 1 bag romaine & leaf lettuce (about 6 cups)
- 1 can (11 oz) mandarin oranges, drained
- 1/2 cup dried cranberries
- 1/3 cup red onion, thinly sliced
- CRANBERRY VINAGRETTE
- 1/3 cup olive oil
- 3 tablespoons cranberry flavored white wine vinegar
- 2 tablespoons sugar
- 1 teaspoon dijon mustard
- 1/4 teaspoon salt
How To Make kathleen's salad

Step 1Combine vinagrette ingredients in a container with a lid. Shake well.

Step 2Heat pecans and sugar in a skillet over medium heat about 5 minutes, stirring constantly, until sugar begins to caramelize. Let cool, break apart.

Step 3Toss dressing with remaining ingredients. Sprinkle with pecans.
