Ingredients

  • 1/2 cup pecans
  • 2 tablespoons sugar
  • 1 bag romaine & leaf lettuce (about 6 cups)
  • 1 can (11 oz) mandarin oranges, drained
  • 1/2 cup dried cranberries
  • 1/3 cup red onion, thinly sliced
  • CRANBERRY VINAGRETTE
  • 1/3 cup olive oil
  • 3 tablespoons cranberry flavored white wine vinegar
  • 2 tablespoons sugar
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt

How To Make kathleen's salad

  • Step 1
    Combine vinagrette ingredients in a container with a lid. Shake well.
  • Step 2
    Heat pecans and sugar in a skillet over medium heat about 5 minutes, stirring constantly, until sugar begins to caramelize. Let cool, break apart.
  • Step 3
    Toss dressing with remaining ingredients. Sprinkle with pecans.
  • Step 4
    Enjoy.
