Ingredients
- SALAD
- 4 cups finely shredded kale
- 1 1/2 cups watermelon, cut in small cubes
- 1 1/2 cups blueberries
- 1 - carrot
- 1 - bell pepper, any color
- 1/4 cup chopped walnuts
- 1/2 cup pumpkin seeds
- DRESSING
- 3 tablespoons vinegar
- 1 1/2 tablespoons olive oil
- 2 teaspoons honey
- 1/4 teaspoon dry mustard
How To Make kale-watermelon salad

Step 1Remove the stems and shred the kale.

Step 2Place the dressing ingredients in a bowl and mix until honey completely dissolves.

Step 3Pour the dressing over the kale and massage it in so the kale softens. Place kale in the refrigerator while preparing the rest of the ingredients.

Step 4Thinly slice the pepper and cube the watermelon. Slice the carrots.

Step 5Add the fruit and vegetables to the kale and toss to mix.

Step 6Heat a skillet over medium heat. Add the pumpkin seeds and chopped walnuts. Cook until toasted. Stir occasionally to keep from burning.

Step 7Sprinkle the nuts and seeds over the salad right before serving.
