Ingredients

SALAD

4 c
finely shredded kale
1 1/2 c
watermelon, cut in small cubes
1 1/2 c
blueberries
1
carrot
1
bell pepper, any color
1/4 c
chopped walnuts
1/2 c
pumpkin seeds

DRESSING

3 Tbsp
vinegar
1 1/2 Tbsp
olive oil
2 tsp
honey
1/4 tsp
dry mustard

How to Make Kale-Watermelon Salad

Step-by-Step

  • 1Remove the stems and shred the kale.
  • 2Place the dressing ingredients in a bowl and mix until honey completely dissolves.
  • 3Pour the dressing over the kale and massage it in so the kale softens. Place kale in the refrigerator while preparing the rest of the ingredients.
  • 4Thinly slice the pepper and cube the watermelon. Slice the carrots.
  • 5Add the fruit and vegetables to the kale and toss to mix.
  • 6Heat a skillet over medium heat. Add the pumpkin seeds and chopped walnuts. Cook until toasted. Stir occasionally to keep from burning.
  • 7Sprinkle the nuts and seeds over the salad right before serving.
