Ingredients

  • FOR THE CHICKEN
  • 4 boneless skinless chicken thighs
  • 1 cup mango nectar
  • 3 cloves garlic, minced
  • 1/2 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • salt and pepper
  • COUSCOUS
  • 1 cup couscous cooked according to package directions
  • SALAD AND DRESSING
  • 2 cups baby spinach
  • 1/4 cup cilantro, chopped
  • 1/4 red onion, sliced
  • 1 mango, peeled and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon lime zest
  • 1/4 cup lime juice
  • salt and pepper

How To Make grilled chicken with couscous mango salad

  • Step 1
    Mix the mango nectar, garlic, lime zest and juice cumin, salt and pepper. Add the chicken thighs and marinate for 4 hours.
  • Step 2
    Remove the chicken from the marinade and grill for 10 minutes turning often and brush with marinade.
  • Step 3
    Cook the couscous according to package instructions.
  • Step 4
    For the dressing, mix the olive oil, sugar, lime juice, and zest with salt and pepper.
  • Step 5
    To serve. Plate the couscous, then the spinach, red onion and mango slices. Top with the chicken cut into pieces. Drizzle dressing over top.
