Ingredients
- FOR THE CHICKEN
- 4 boneless skinless chicken thighs
- 1 cup mango nectar
- 3 cloves garlic, minced
- 1/2 teaspoon lime zest
- 2 tablespoons lime juice
- 1 teaspoon cumin
- salt and pepper
- COUSCOUS
- 1 cup couscous cooked according to package directions
- SALAD AND DRESSING
- 2 cups baby spinach
- 1/4 cup cilantro, chopped
- 1/4 red onion, sliced
- 1 mango, peeled and sliced
- 2 tablespoons olive oil
- 1 teaspoon lime zest
- 1/4 cup lime juice
- salt and pepper
How To Make grilled chicken with couscous mango salad

Step 1Mix the mango nectar, garlic, lime zest and juice cumin, salt and pepper. Add the chicken thighs and marinate for 4 hours.

Step 2Remove the chicken from the marinade and grill for 10 minutes turning often and brush with marinade.

Step 3Cook the couscous according to package instructions.

Step 4For the dressing, mix the olive oil, sugar, lime juice, and zest with salt and pepper.

Step 5To serve. Plate the couscous, then the spinach, red onion and mango slices. Top with the chicken cut into pieces. Drizzle dressing over top.
