I first had a version of this salad at my friend's house in 1967. Her mom had gotten the recipe from a restaurant that was famous for it. This version includes artichoke hearts.

Ingredients

  • 6 cups lettuce, torn
  • 4-6 - artichoke hearts
  • 1/2 cup ripe olives
  • 2 ounces anchovy fillets (optional)
  • 1 cup grape tomatoes
  • DRESSING
  • 1 1/2 cups light mayonnaise
  • 1/4 cup chives
  • 2 tablespoons tarragon vinegar
  • 2 tablespoons parsley
  • 1 tablespoon tarragon leaves, crushed (if not using tarragon vinegar)
  • 4 - anchovy fillets, chopped
  • 1 - green onion

How To Make green goddess salad

  • Step 1
    Combine all salad ingredients in large bowl.
  • Step 2
    Mix together dressing ingredients. Pour on salad, serve!
