Easy, Fresh, Tasty, Healthy! What more could you want! Cook times will vary, depending on how long it takes you to cook up the bacon and if you decide to grill the mushrooms or chicken....oh and if you decide if you wish to add the hard boiled eggs.....

Ingredients

  • 4 - bags of fresh baby spinach
  • 1 - red onion sliced thin
  • 2 cans sliced waterchestnuts
  • 1 pint sliced fresh baby bella mushrooms
  • 1 pound bacon
  • 1 cup smart balance oil
  • 1/2 cup apple cider vinegar
  • 3/4 cup regular splenda
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon coarse ground black pepper
  • 2 1/8 tablespoons finley chopped onion or 1 tb dried copped onion
  • 1/3 cup ketchup
  • - optional: grilled portabella mushroom strips or grilled chicken breats
  • - optional: sliced hard boiled eggs

How To Make fresh spinach salad

  • Step 1
    dressing: mix Splenda and vinegar add the ketchup, oil, wocestershire,pepper & onion....put in fridge to chill until meal time
  • Step 2
    cut bacon slices and cut into 1/2 pieces and cook in pot on stove til nice and crisp, drain on paper towel and set aside
  • Step 3
    in large salad bowl toss the spinach, waterchestnuts, onion slices, bacon and toss with the dressing before serving, can top with hard boiled egg slices if desired
  • Step 4
    if making it a meal, top with either grilled portabella mushroom sliced or sliced grilled chicken breasts
