Ingredients
- BLUE CHEESE DRESSING
- 1/4 cup buttermilk
- 2 tablespoons light mayo
- 2 tablespoons plain Greek yogurt
- 4 tablespoons crumbled blue cheese or gorgonzola
- 1 1/2 teaspoons white wine vinegar
- 1/4 teaspoon pepper
- 1/4 cup balsamic vinegar
- 2 teaspoons light brown sugar
- SALAD INGREDIENTS
- 1 medium head iceberg lettuce, quartered
- 1 cup chopped tomatoes or sliced cherry tomatoes
- red onion rings
- 3 tablespoons bacon pieces
- Parmesan cheese, optional
How To Make fancy wedge salad with all the trimmings

Step 1To make the dressing, mix buttermilk, mayo, yogurt, blue cheese, and vinegar together in a small bowl or food processor.

Step 2Simmer balsamic vinegar and brown sugar on stovetop over medium to medium low heat for approximately 6 minutes until reduced by half and thickened. Be careful not to burn the mixture.

Step 3To make the salad, cut the head of lettuce into quarters and place on individual plates. Pour 3 Tbsp. dressing over each wedge. Top each with 1/4 cup tomatoes. Place red onion rings on top and sprinkle each wedge with bacon bits. Drizzle balsamic mixture over each lettuce wedge. Top with Parmesan, if desired.
