This recipe is super easy to make. The dressing is delicious. For a little variety, you can also use flavored red wine vinegar.

A very simple green salad you'll enjoy all summer long. Romaine lettuce provides a nice, sturdy base. Fresh broccoli adds texture while the green onions add a pop of flavor. We loved the crunch and buttery flavor of toasted ramen noodles and walnuts. The simple dressing is slightly sweet and tangy. Light and fresh, this is a satisfying salad to serve with most any type of grilled meal.

Ingredients

  • 1 head romaine lettuce
  • 1 bunch broccoli, chopped
  • 1 bunch green onions, chopped
  • 1 package Ramen noodles, crushed (discard flavor packet)
  • 1/2 cup chopped walnuts
  • 4 tablespoons butter
  • DRESSING
  • 1 cup oil
  • 1/2 cup granulated sugar
  • 1/4 cup red wine vinegar
  • 1 tablespoon soy sauce
  • salt and pepper, to taste

We did not pour the dressing over the entire salad. We dressed individual salads and had dressing leftover.
  • Brown Ramen noodles and walnuts in butter.
    Step 1
    Melt butter, brown Ramen noodles, and walnuts.
  • Drain on a paper towel and cool.
    Step 2
    Drain on a paper towel and allow to cool.
  • Toss the lettuce, green onions, and broccoli.
    Step 3
    Toss together the lettuce, green onions, and broccoli.
  • Mix together the dressing ingredients.
    Step 4
    Mix together the dressing.
  • Dress the salad.
    Step 5
    Toss the dressing with the salad.
