This is so good. It doesn't need a dressing because of the pickled onions. It also has nuts and Parmesan cheese.

Ingredients
- PICKLED ONIONS
- 1/2 cup balsamic vinegar
- 2 tablespoons Kosher salt
- 2 tablespoons granulated sugar
- 1 red onion, sliced thinly
- 1 teaspoon Crystal hot sauce
- SALAD
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup toasted pistachio nuts
- 1/4 cup fresh chives
- 1 head of escarole cut into pieces
- 2 tablespoons olive oil
How To Make escarole salad

Step 1For the onions, combine the vinegar with 1/2 cup cold water in a bowl. Add the salt, sugar, and hot sauce and stir to combine. Add the onions and let sit for an hour.

Step 2For the salad, add the Parmesan, chives, and pistachios in a food processor. Give it all a coarse chop.

Step 3In a bowl, add the escarole and the nut mixture. Toss with some of the onions and dress with some pickling liquid and olive oil.
