This is so good. It doesn't need a dressing because of the pickled onions. It also has nuts and Parmesan cheese.

Ingredients

  • PICKLED ONIONS
  • 1/2 cup balsamic vinegar
  • 2 tablespoons Kosher salt
  • 2 tablespoons granulated sugar
  • 1 red onion, sliced thinly
  • 1 teaspoon Crystal hot sauce
  • SALAD
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup toasted pistachio nuts
  • 1/4 cup fresh chives
  • 1 head of escarole cut into pieces
  • 2 tablespoons olive oil

How To Make escarole salad

  • Step 1
    For the onions, combine the vinegar with 1/2 cup cold water in a bowl. Add the salt, sugar, and hot sauce and stir to combine. Add the onions and let sit for an hour.
  • Step 2
    For the salad, add the Parmesan, chives, and pistachios in a food processor. Give it all a coarse chop.
  • Step 3
    In a bowl, add the escarole and the nut mixture. Toss with some of the onions and dress with some pickling liquid and olive oil.
