This is such a quick and easy salad yet SO tasty! You can also use the same amount of the other ingredients and half the amount of spinach for fewer people.

Ingredients

  • 1 1/2 lb
    fresh baby spinach
  • 3
    red or green apples (or combo)
  • 2/3 c
    dry roasted peanuts
  • 1/2 c
    raisins (golden or regular)
  • 1/3 c
    thinly sliced green onion
  • 2 Tbsp
    sesame seeds, toasted
  • 1/2 c
    rice vinegar
  • 2/3 c
    olive oil, light
  • 1 Tbsp
    mango chutney
  • 1 tsp
    each: curry powder, salt, and dry mustard

How to Make Curried Spinach Salad

Step-by-Step

  1. Prepare in salad bowl, spinach, apples sliced, green onion, peanuts, and raisins. Toss with desired amount of dressing and top with toasted sesame seeds
  2. Prepare dressing: in a bowl, whisk together vinegar, chutney, dry seasonings adding olive oil last. Whisk well until all ingredients are blended together.
