Ingredients
- 8 ounces goat cheese
- 1 large egg
- 1/2 cup Panko bread crumbs
- 2 tablespoons olive oil
- 1 honey crisp apple peeled, seeded and sliced
- 1 tablespoon lemon juice
- 2 large tomatoes sliced
- 5 ounces baby spring mix
- 1/4 dash walnuts
- LEMON VINAIGRETTE
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon Dijon Mustard
- 1 1/2 tablespoons honey
- 1 cup garlic minced
- salt and pepper to taste
How To Make crispy goat cheese salad

Step 1Set up a dredging station. Place the egg in one shallow dish and beat it until frothy. Place the Panko in another shallow dish. Roll the goat cheese into 8 balls and then flatten them a bit. Add oil to a frying pan and get it hot. Dredge the goat cheese in the egg then Panko. Fry until brown and crispy on both sides.

Step 2Place the spring mix on 4 plates. Sprinkle the apple slices with the lemon juice and arrange around the dish. Place the tomato slices around the other side of the plate. Top with Walnuts. Place 2 goat cheese on each plate.

Step 3To make the vinaigrette. Combine all ingredients in a jar and shake well. Drizzle over the salad
