Ingredients
- 8 slices bacon
- 1/2 cup mayonnaise
- 2 tablespoons milk, half & half, or light cream
- 1 tablespoon honey
- 1 tablespoon lemon juice
- - salt & pepper
- 6 cups fresh spinach, rinsed, stems removed & torn
- 1 cup sliced fresh mushrooms
- 1 - medium tomato chopped
- 2 - hard cooked eggs chopped
- - thinly sliced red onion
How To Make creamy tossed spinach salad

Step 1Cook bacon to crisp. Drain & crumble 4 of the slices. Reserve remaining 4 slices and 1 tsp to 1 tbl of drippings. Discard remaining drippings.

Step 2In a bowl, combine mayo, milk, honey, lemon, salt & pepper, crumbled bacon and as much of the bacon drippings as you like. Stir well to combine.

Step 3In a salad bowl, lightly toss the spinach, mushrooms, tomato and eggs. Pour dressing over, toss and coat well. Garnish with the other 4 pcs. of bacon broken into larger pcs.
