I just love this recipe for Cobb salad! Don't know where I got this recipe as it is handwritten by me and the ink on the paper is getting faded.

Ingredients

  • 1/2 - head iceburg lettuce (abt 4 cups)
  • 1 small head curly endive ( abt 2 1/2 cups)
  • 1/2 - head romaine lettuce (abt 2 1/2 cups)
  • 1 bunch watercress (bottom stems removed)
  • 2 - tomatoes , peeled and diced
  • 6 - strips crisp cooked bacon, crumbled
  • 2 - whole boneless chicken breasts,boiled, diced
  • 3 - hard boiled eggs,chopped into small pieces
  • 1 - ripe avocado,peeled,diced just before serving
  • 3/4 cup roquefort blue cheese,crumbled
  • 2 tablespoons finely chopped chives
  • - dressing:
  • 1/4 cup water
  • 1/4 cup red wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon lemon juice
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 3/4 teaspoon worcestershire sauce
  • 1 teaspoon dijon mustard
  • 1 - clove garlic
  • 3/4 cup olive oil, extra virgin

How To Make cobb salad

  • Step 1
    Cut all the lettuce and 1/2 of the watercress in a salad bowl.
  • Step 2
    Arrange tomatoes, bacon, chicken, eggs, avocado and cheese in strips on greens.
  • Step 3
    Sprinkle the chives over the entire salad and garnish with the remaining watercress.
  • Step 4
    TO MAKE THE DRESSING;
  • Step 5
    In a medium bowl, blend together all the ingredients except the oil. Add oil and mix well.
  • Step 6
    Just before serving, drizzle salad with dressing.
