I adore chopped salads, as every single bit gets coated in a delectable dressing. This is a perfect entree salad for those hot days of summer when you just don't want to cook. A rotisserie chicken is perfect for this.

Ingredients For chopped salad with chicken and grapes

  • 1 lg
    head romaine lettuce, heart only
  • 1 pt
    cherry tomatoes
  • 1/2 lg
    english cucumber
  • 1 sm
    red onion, to taste
  • 1 c
    corn kernels, fresh or frozen (thawed)
  • 3/4 c
    green grapes, halved
  • 1 c
    cooked chicken, diced
  • 1/2 c
    feta cheese, crumbled
  • DRESSING:
  • 3 Tbsp
    extra-virgin olive oil
  • 2 Tbsp
    red wine vinegar
  • 1 Tbsp
    lime juice, freshly squeezed
  • kosher salt & pepper, to taste
  • 2 Tbsp
    fresh basil, minced
  • 2 Tbsp
    fresh mint, minced

How To Make chopped salad with chicken and grapes

    Coarsely chop the romaine heart and place in a large bowl. Halve the cherry tomatoes and add to the bowl. Peel the cucumber, cut into 1/2 inch dice and add to the bowl. Cut the red onion into 1/4 inch dice and add to the bowl. Halve the green grapes and add to the bowl.

    Add the diced chicken and feta cheese to the bowl. Toss to combine.

    In a small bowl, combine the olive oil, vinegar and lime juice. Season to taste with salt and pepper. Add the minced basil and mint. Pour over the salad and toss to coat.

    Serve immediately. This salad will not keep. If made ahead. Add the dressing right before serving.
