I adore chopped salads, as every single bit gets coated in a delectable dressing. This is a perfect entree salad for those hot days of summer when you just don't want to cook. A rotisserie chicken is perfect for this.

Ingredients For chopped salad with chicken and grapes

1 lghead romaine lettuce, heart only

1 ptcherry tomatoes

1/2 lgenglish cucumber

1 smred onion, to taste

1 ccorn kernels, fresh or frozen (thawed)

3/4 cgreen grapes, halved
-
1 ccooked chicken, diced
-
1/2 cfeta cheese, crumbled
- DRESSING:

3 Tbspextra-virgin olive oil
-
2 Tbspred wine vinegar
-
1 Tbsplime juice, freshly squeezed

kosher salt & pepper, to taste

2 Tbspfresh basil, minced
-
2 Tbspfresh mint, minced
How To Make chopped salad with chicken and grapes

1Coarsely chop the romaine heart and place in a large bowl. Halve the cherry tomatoes and add to the bowl. Peel the cucumber, cut into 1/2 inch dice and add to the bowl. Cut the red onion into 1/4 inch dice and add to the bowl. Halve the green grapes and add to the bowl.

2Add the diced chicken and feta cheese to the bowl. Toss to combine.

3In a small bowl, combine the olive oil, vinegar and lime juice. Season to taste with salt and pepper. Add the minced basil and mint. Pour over the salad and toss to coat.

4Serve immediately. This salad will not keep. If made ahead. Add the dressing right before serving.
