A different and delicious twist on cole slaw. Great addition to any cookout or potluck! The Chipotle Cream Sauce is dynamite!!

Ingredients

  • 1 cup mayonnaise (recommended: miracle whip)
  • 3/4 cup creole mustard (recommended: zatarains)
  • 2 large chipotle peppers in adobo, seeded
  • 1 tablespoon adobo
  • 3 - scallions, coarsely chopped
  • 2 cups heavy cream
  • - salt and pepper to taste
  • 1/2 - head purple cabbage, sliced
  • 1/2 - head white cabbage, sliced
  • 1 - carrot, julienne
  • 1 - purple onion, coarsley chopped
  • 2 tablespoons cilantro, coarsley chopped
  • 1/4 cup olive oil
  • 1 - 2 - limes, juiced

How To Make chipotle cole slaw - steph

  • Step 1
    For the Chipotle Cream Sauce: Put all the ingredients in a blender (except the heavy cream). Add salt and pepper and blend well. Remove from the blender to a mixing bowl and slowly whisk. Add in the heavy cream. All the cream may not be needed. Can add more Chipotle in adobo for more spice, if desired. Cover and refrigerate.
  • Step 2
    For the Slaw: Add the cabbages to a mixing bowl. Toss with the carrot, onion, cilantro, olive oil and lime juice, to taste. Season with salt and pepper. Mix well and cover and refrigerate.
  • Step 3
    The Chipotle Cream Sauce thickens when chilled and would also be great as a dip, replacing the heavy cream with sour cream or even yogurt. The sauce is dynamite! ENJOY!
