Ingredients

  • - 1/4 cup olive or vegetable oil
  • - 1/4 cup white wine vinegar
  • - 1 tbsp. toasted sesame oil
  • - 1 tbsp. soy sauce
  • - 1 tbsp. lemon juice
  • - 1 tbsp. ketchup
  • - 3/4 tsp. salt
  • - 1/4 tsp. grated fresh ginger
  • - 1/4 tsp. sugar
  • - 1/4 tsp. ground pepper
  • - 1 head iceberg lettuce, shredded
  • - 1 bunch broccoli, cut into florets
  • - 3/4 cup sliced large white mushrooms
  • - 1/4 cup bias sliced celery
  • - 1/4 cup shredded carrot
  • - 1/4 cup chopped red or green bell pepper
  • - 1 cup crisp chow mein noodles

How To Make chinese noodle and vegetable salad

  • Step 1
    To make dressing, mix the oil, white wine vinegar, toasted sesame oil, soy sauce, lemon juice, ketchup, salt, grated ginger, sugar and ground pepper in a food processor or blender. Cover and process til well blended. Set aside.
  • Step 2
    In large bowl, toss together the lettuce, broccoli florets, mushrooms, celery, carrot and bell pepper. Drizzle dressing over the salad and toss well to coat. Spoon salad onto 4 plates; sprinkle with chow mein noodles and serve.
