Ingredients

1/4 cup olive or vegetable oil
1/4 cup white wine vinegar
1 tbsp. toasted sesame oil
1 tbsp. soy sauce
1 tbsp. lemon juice
1 tbsp. ketchup
3/4 tsp. salt
1/4 tsp. grated fresh ginger
1/4 tsp. sugar
1/4 tsp. ground pepper
1 head iceberg lettuce, shredded
1 bunch broccoli, cut into florets
3/4 cup sliced large white mushrooms
1/4 cup bias sliced celery
1/4 cup shredded carrot
1/4 cup chopped red or green bell pepper
1 cup crisp chow mein noodles

How to Make Chinese Noodle and Vegetable Salad

Step-by-Step

  • 1To make dressing, mix the oil, white wine vinegar, toasted sesame oil, soy sauce, lemon juice, ketchup, salt, grated ginger, sugar and ground pepper in a food processor or blender. Cover and process til well blended. Set aside.
  • 2In large bowl, toss together the lettuce, broccoli florets, mushrooms, celery, carrot and bell pepper. Drizzle dressing over the salad and toss well to coat. Spoon salad onto 4 plates; sprinkle with chow mein noodles and serve.
