Everyone loves this salad. Everytime we have a pot luck I'm always asked to bring this. The recipe calls for iceburg lettuce, but I prefer to use a combination of iceburg and romaine. Also, I have a friend who loves to add mandarin oranges for a little sweetness. I hope you enjoy!

Ingredients

  • 4 - chicken breasts - boiled, drained, cooled and shredded.
  • 1 large head of iceburg lettuce, sliced thin
  • 3-6 - green onions, chopped
  • 1/4 cup toasted sesame seeds
  • 1/2 package wonton wrappers
  • DRESSING
  • 4 tablespoons sugar
  • 2 teaspoons salt
  • 4 tablespoons white vinegar
  • 1 teaspoon black pepper
  • 1/2 cup vegetable oil

How To Make chinese chicken salad

  • Step 1
    Make dressing first. Dissolve sugar, salt, vinegar and pepper in a small sauce pan over low heat. Remove and let cool. Pour into a container with a lid. Add oil when cool.

    While dressing is cooling, fry wonton wrappers in 2 inches of oil in a small fry pan over medium heat. They will cook quickly so be sure to watch them closely. Remove from oil when they are only slightly brown, they will continue to cook while they cool. Place them on a plate covered in paper towels to absorb excess oil. In a large bowl, combine, lettuce, green onions, chicken and sesame seeds. When wontons are cooled, place in a large ziplok bag, seal and crush up wontons into bite size pieces. Add to salad. Shake up dressing so it is combined. Pour on salad, toss and enjoy.
