Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by Wanda Schomp.

Ingredients

  • 1
    romaine lettuce head
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 clove
    garlic
  • 1/2 tsp
    prepared mustard
  • 2 Tbsp
    worcestershire sauce
  • 1/2 tsp
    anchovy paste (optional)
  • 1/2
    lemon
  • 4 Tbsp
    olive oil
  • 1
    egg
  • ·
    parmesan cheese
  • ·
    croutons

How to Make Caesar Salad

Step-by-Step

  1. Wash lettuce and remove hard center stems. Place in clean towel and refrigerate until ready to serve.
  2. Combine salt, pepper and garlic with fork in a wooden salad bowl.
  3. Add mustard, Worcestershire sauce and anchovy paste; mix.
  4. Add juice of 1/2 lemon, olive oil and egg; mix well.
  5. Add lettuce and toss. To serve, place salad on plate; top with Parmesan cheese and croutons.
