Ingredients
- SALAD
- 1 pound fresh Brussels sprouts
- 2 cups leafy lettuce
- 1 medium tomato, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons shelled pistachio nuts
- 1/4 cup freshly shaved Parmesan cheese
- DRESSING
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 2 teaspoons fresh lemon juice
- salt and pepper, to taste
How To Make brussels sprouts salad with garlic lemon dressing

Step 1To make the salad, place the Brussels sprouts in boiling water and boil for 10 minutes. Meanwhile, mix the dressing ingredients together in a glass jar and place in the fridge until salad is ready.

Step 2Drain the Brussels sprouts and cut in half. Dry on paper towels and let cool. Place the lettuce on the plates and top with Brussels sprouts, tomatoes, parsley, pistachios and shaved Parmesan.

Step 3Drizzle with the dressing.
