"blt" salad

This salad is a favorite at The Pink House Restaurant in Savannah. Very simple and delicious.

Ingredients

  • 2 - fried green tomatoes
  • 2 slices applewood smoked backon
  • - mixed field greens
  • - buttermilk thyme dressing (2 oz) recipe follows
  • 1 cup buttermilk
  • 1 cup mayonnaise
  • 4 ounces sour cream
  • 1/4 teaspoon fresh thyme
  • 1/4 teaspoon black pepper
  • 1/4 cup red wine vinegar
  • 1 clove chopped garlic
  • 1/2 teaspoon honey
  • - salt to taste

How To Make "blt" salad

  • Step 1
    Soak tomatoes in buttermilk, coat in flour mixture (1/2 flour, 1/2 cornmeal, salt and pepper)fry to a golden brown. Cook bacon in brown sugar, fold into a circle.
  • Step 2
    Mix all ingredients for Buttermilk Thyme Dressing
  • Step 3
    Mix greens in dressing. Stack salad by layering greens with tomato and bacon. Garnish last tomato with a small amount of dressing, chopped red pepper and green onion.
