bacon broccoli salad, microwave

This is a recipe shared on another recipe program I have, and it was so wonderful! I made it my own...a little alterations to your personal taste won't hurt! I like crunchy toppings, and the salad cold.

Ingredients

  • 8-10 slices bacon, cooked and crumbled (i use the bag of soft bacon from the salad section of the grocery store)
  • 20 ounces frozen broccoli
  • 1 - carrot, grated
  • 1 small red onion, thinly sliced (or i have used vidalia)
  • 6 tablespoons apple cider vinegar
  • 3 tablespoons sugar
  • 3 tablespoons vegetable oil
  • - salt and pepper to taste
  • MY ADD ON TOP OPTIONS:
  • - sesame seeds
  • - craisins or raisins
  • - sliced almonds/roasted almonds in the bag by the salad toppings
  • - honey pecans, also by those salad dressigns

How To Make bacon broccoli salad, microwave

  • Step 1
    Cook broccoli according to microwave instructions, until tender-crisp, about 9-10 minutes. In lrg bowl, mix together well drained Broccoli, Carrot and Red Onion. In glass measuring cup, combine Vinegar, Sugar and Oil; microwave, on High, 2 minutes. Pour over vegetable mixture; mix well. Add salt and pepper to taste. Serve warm or chilled, with crumbled bacon on top.
  • Step 2
    I also top with sesame seeds, and craisins or raisins depending on my mood! I've even been known to add sliced roasted almonds in the bag, or honey pecans in the bag (both are in the salad section of the grocery store with the bags of soft bacon bits).
