bacon & bleu combo salad

This is my "make a meal of it" salad that delights the taste buds with a variety of complementary flavors and textures. If you aren't a bleu cheese fan, use your own favorite cheese as a substitute. My husband prefers cheddar, but mozzarella, colby etcetera, would be great too.

Ingredients

  • 5-6 - romaine lettuce leaves, torn bite-size (approx. 5 cups)
  • 2 - baby carrots, shredded or sliced paper-thin
  • 1 - inch of small zucchini, sliced thin and quartered
  • 1 slice smoked ham lunchmeat, chopped or slivered
  • 1 1/2 tablespoons real hickory smoked bacon bits
  • 1 1/2 tablespoons bleu cheese crumbles
  • 4 medium cherry tomatoes, halved
  • 1/3 cup herb seasoned croutons
  • 2-3 tablespoons caesar, ranch or bleu cheese dressing, your favorite (i use wishbone brand)

How To Make bacon & bleu combo salad

  • Step 1
    Place torn romaine lettuce in generous size salad bowl.
  • Step 2
    Add remaining ingredients in the order listed, adding dressing just before serving.
  • Step 3
    Cover and refrigerate leftovers. May be assembled, covered and refrigerated well ahead of time, except for the croutons and dressing.
