This is one of my mom's recipes and it's become my go-to recipe for summer cook-outs. You can substitute the slaw for lettuce if you'd rather have a salad. If you don't include the chicken, this recipe is vegan.

Ingredients

  • 1 1/2 bags cole slaw mix
  • 1 - whole rotisserie chicken
  • 1 bunch green onions
  • 1 package 2 oz slivered almonds
  • 1 tablespoon poppy seeds
  • 1 can chow mein noodles
  • DRESSING
  • 1/4 cup sugar
  • 4 teaspoons salt
  • 1 teaspoon black pepper
  • 1/4 cup cider vinegar
  • 1 cup canola oil

How To Make asian chicken slaw

  • Step 1
    Shred the rotisserie chicken. You can also bake 3-4 chicken breasts and then shred them.
  • Step 2
    In a nonstick skillet, toast the slivered almonds until they start to brown.
  • Step 3
    Green onions are optional. If you choose to use them, slice them fine.
  • Step 4
    Combine the first five ingredients in your serving bowl.
  • Step 5
    For the dressing, combine all ingredients.
  • Step 6
    Right before serving, add the dressing to the slaw mixture and toss until thoroughly mixed.
  • Step 7
    Add a few handfuls of chow mein noodles to cover the top and serve.
