This is my version of apple salad. I’ve been making it this way for a long time. It’s one of my husband‘s favorites. I hope everyone enjoys the salad. It makes a great side salad for roast chicken, grilled chicken, ribs, and steak.

Ingredients

  • GLAZED PECANS
  • 1 tablespoon butter
  • 1 1/2 tablespoons brown sugar, firmly packed
  • 1/3 cup pecan halves
  • RED WINE VINAGRETTE
  • 6 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 1/2 tablespoons honey
  • 1 clove garlic
  • 1/2 teaspoon salt
  • SALAD
  • 4 cups packed chopped romaine or green and red leaf lettuce
  • 1 cup peeled, chopped apples, pink lady or other
  • 2 tablespoons lemon juice
  • 3 tablespoons dried cranberries, I use low sugar
  • 1/2 cup Feta cheese
  • 2 slices sweet onion coarsely chopped or other
  • 1/3 cup glazed pecans (see recipe)

How To Make apple pecan cranberry salad for two

  • Step 1
    Make the pecans. Melt the butter in a small skillet on medium heat. Add pecans. Cook until lightly browned. Add sugar and stir constantly until it thickens. With a slotted spoon onto parchment paper to cool.
  • Step 2
    Make dressing. Add all ingredients to a Magic Bullet blender or any blender or food processor. Mix on high for one to two minutes until everything is blended well. Refrigerate dressing. If you don’t have a blender, combine all ingredients in a shaker bottle and refrigerate at least 6 to 8 hours ahead of time. If you use the Magic Bullet or blender, you can serve the dressing right away..
  • Step 3
    Prepare the salad. Measure 4 cups of lettuce. Divide into two bowls.
  • Step 4
    Mix chopped apple with 2 Tbsp lemon juice. Place half the apples on top of the lettuce in each bowl.
  • Step 5
    Sprinkle the top of each bowl of salad with the cranberries, onions, pecans, and Feta cheese.
  • Step 6
    Serve with dressing.
