wild rice & cranberry salad

This is a favorite for anytime ..it's crunchy, delicious, & colorful especially for Christmas. Warning: Contains Peanuts!

Ingredients

  • 1- 8oz packages rice, long-grain/wild rice blend (microwave pkg)
  • 1 cup sweetened dried cranberries
  • 1 cup fresh broccoli flowerets
  • 4 - green onions
  • 3 - celery ribs
  • 1- 2oz jars pimientos (diced & drained)
  • 1/2 cup sweet & sour dressing (kroger brand)
  • 1 jar peanuts, dry roasted

How To Make wild rice & cranberry salad

  • Step 1
    Prep: Microwave & Refrigerate Wild Rice. Cut Broccoli florets into small pieces, chop onions (use part of green too), chop celery into small pieces.
  • Step 2
    In large bowl, combine chilled rice, cranberries, onions, celery, pimientos. Stir in broccoli then gently stir in salad dressing.
  • Step 3
    Cover & chill at least 2 hours. Top individual servings with a few dry roasted peanuts.
