watermelon salad with feta and basil

I got this recipe a number of years ago from Everyday Food magazine. It has become a favorite of ours and it is very refreshing to have on a warm night. There are only the two of us so I don't make a full batch.

Ingredients

  • 3 1/2 pounds seedless watermelon (rind removed) cut into 1 inch cubes (6 cups)
  • 2 tablespoons fresh lime juice
  • 1/2 cup fresh basil leaves cut into thin strips.
  • - coarse salt and ground pepper
  • 4 ounces feta cheese, broken into large pieces (about 1 cup)

How To Make watermelon salad with feta and basil

  • Step 1
    In a large bowl, combine watermelon, lime juice, and half the basil: season with salt and pepper.
  • Step 2
    Toss to combine. Divide among 4 plates; scatter cheese and remaining basil on top.

    Enjoy!
