  • 1/4 c
    balsamic vinegar
  • 6 c
    diced seedless watermelon
  • 4 oz
    crumbled goat cheese or feta
  • 1/4 c
    fresh mint leaves
  • 2 Tbsp
    olive oil

How to Make Watermelon Salad with Balsamic Reduction

Step-by-Step

  1. To make the balsamic reduction, add balsamic vinegar to a small saucepan over medium heat.
  2. Bring to a boil until thick and reduced, about 4-5 minutes.
    In a large bowl, combine watermelon, cheese, mint, and olive oil.
  3. Serve immediately, drizzled with balsamic reduction.
