watermelon & baby spinach w/balsamic vinaigrette
One day my grand daughter wanted a watermelon from the grocer, so we bought one for her. After cutting it all up, I wanted to eat a watermelon salad or somethin'. . . here is what I came up with . . . I added a few fruits in it and it was the "BOMB"! It was so good that I went for seconds and then ate the rest for dessert!!!

Ingredients
- 1 package fresh baby spinach
- 1 - japanese cucumber, thinly sliced
- 1 tablespoon fresh mint, julienned
- 4 cups watermelon, diced
- 1 cup fresh strawberries, sliced
- 1 cup fresh red seedless grapes
- 1 cup fresh green seedless grapes
- 1 cup cherry tomatoes
- 1 small red onion, thinly sliced
- 1/4 cup balsamic vinaigrette
- 6 ounces feta cheese
- 1 - lime, freshly squeezed
- BALSAMIC VINAIGRETTE
- 1/4 cup balsamic vinegar
- 2 teaspoons dark brown sugar
- 1 tablespoon finely chopped garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup olive oil
How To Make watermelon & baby spinach w/balsamic vinaigrette

Step 1In a large salad bowl, combine all the ingredients and lightly toss salad. Serve chilled. Add more balsamic vinaigrette as needed.

Step 2BALSAMIC VINAIGRETTE:

Step 3In a small mixing bowl, combine all ingredients and whisk briskly until blended. Refrigerate the remaining balsamic vinaigrette.
