watermelon & baby spinach w/balsamic vinaigrette

One day my grand daughter wanted a watermelon from the grocer, so we bought one for her. After cutting it all up, I wanted to eat a watermelon salad or somethin'. . . here is what I came up with . . . I added a few fruits in it and it was the "BOMB"! It was so good that I went for seconds and then ate the rest for dessert!!!

Ingredients

  • 1 package fresh baby spinach
  • 1 - japanese cucumber, thinly sliced
  • 1 tablespoon fresh mint, julienned
  • 4 cups watermelon, diced
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh red seedless grapes
  • 1 cup fresh green seedless grapes
  • 1 cup cherry tomatoes
  • 1 small red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette
  • 6 ounces feta cheese
  • 1 - lime, freshly squeezed
  • BALSAMIC VINAIGRETTE
  • 1/4 cup balsamic vinegar
  • 2 teaspoons dark brown sugar
  • 1 tablespoon finely chopped garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup olive oil

How To Make watermelon & baby spinach w/balsamic vinaigrette

  • Step 1
    In a large salad bowl, combine all the ingredients and lightly toss salad. Serve chilled. Add more balsamic vinaigrette as needed.
  • Step 2
    BALSAMIC VINAIGRETTE:
  • Step 3
    In a small mixing bowl, combine all ingredients and whisk briskly until blended. Refrigerate the remaining balsamic vinaigrette.
