Ingredients

8 c
1 1/4 chunks watermelon (about 6 pounds)
6 c
ripe tomatoes, cored and cut into 1 1/4 chunks (about 3 pounds)
1 tsp
kosher salt
3 Tbsp
chopped assorted fresh herbs (dill, basil, mint, etc)
5 Tbsp
extra virgin olive oil
2 Tbsp
balsamic vinegar
6 c
mixed greens
1 c
crumbled feta cheese (about 5 ounces)

How to Make Tomato Watermelon Salad with Feta

Step-by-Step

  • 1Combine melon and tomatoes in a large bowl
  • 2Sprinkle with kosher salt and toss to blend. Let stand 15 minutes
  • 3Add 4 tablespoons oil, vinegart and herbs to melon mixture. Season to taste with pepper and more salt if needed
  • 4Toss mixed greens with remaining 1 tablespoon oil
  • 5Mix mixed greens and melon mixture and sprinkle with feta cheese
