Ingredients

  • 8 cups 1 1/4 chunks watermelon (about 6 pounds)
  • 6 cups ripe tomatoes, cored and cut into 1 1/4 chunks (about 3 pounds)
  • 1 teaspoon kosher salt
  • 3 tablespoons chopped assorted fresh herbs (dill, basil, mint, etc)
  • 5 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 6 cups mixed greens
  • 1 cup crumbled feta cheese (about 5 ounces)

How To Make tomato watermelon salad with feta

  • Step 1
    Combine melon and tomatoes in a large bowl
  • Step 2
    Sprinkle with kosher salt and toss to blend. Let stand 15 minutes
  • Step 3
    Add 4 tablespoons oil, vinegart and herbs to melon mixture. Season to taste with pepper and more salt if needed
  • Step 4
    Toss mixed greens with remaining 1 tablespoon oil
  • Step 5
    Mix mixed greens and melon mixture and sprinkle with feta cheese
