Ingredients
- 8 cups 1 1/4 chunks watermelon (about 6 pounds)
- 6 cups ripe tomatoes, cored and cut into 1 1/4 chunks (about 3 pounds)
- 1 teaspoon kosher salt
- 3 tablespoons chopped assorted fresh herbs (dill, basil, mint, etc)
- 5 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 6 cups mixed greens
- 1 cup crumbled feta cheese (about 5 ounces)
How To Make tomato watermelon salad with feta

Step 1Combine melon and tomatoes in a large bowl

Step 2Sprinkle with kosher salt and toss to blend. Let stand 15 minutes

Step 3Add 4 tablespoons oil, vinegart and herbs to melon mixture. Season to taste with pepper and more salt if needed

Step 4Toss mixed greens with remaining 1 tablespoon oil

Step 5Mix mixed greens and melon mixture and sprinkle with feta cheese
