1 Tbspfresh parsley, chopped
1 Tbspfresh mint, chopped
3 Tbspfresh lemon juice
1/4 tspfreshly ground black pepper
4 ozlow-fat feta cheese, crumbled
4 largeripe tomatoes, thickly sliced (about 1 1/2 pounds)
How to Make Tomato Salad (Tomata Salata)
- Place the parsley, mint, garlic, lemon juice, water, pepper, and feta in a blender or food processor, and blend into a well-combined sauce.
- Arrange the tomato slices on four salad plates. Top the slices with the sauce and serve.
