- 4 cups seedless watermelon, cubed
- 2 tablespoons olive oil
- 3 tablespoons lime juice
- 1 tablespoon red wine vinegar
- 3/4 cup feta cheese, crumbled
- 1/4 cup fresh mint or italian parsley, coarsely chopped
- - salt and pepper to taste
How To Make tangy watermelon salad

Step 1Place watermelon cubes in a large bowl. Whisk olive oil, lime juice and vinegar in a small bowl and pour over watermelon. Toss to coat. Add salt and pepper to taste. Gently stir in feta cheese and mint/parsley. Serve salad immediately in a watermelon wedge shell.
