Ingredients

  • 4 cups seedless watermelon, cubed
  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • 3/4 cup feta cheese, crumbled
  • 1/4 cup fresh mint or italian parsley, coarsely chopped
  • - salt and pepper to taste

How To Make tangy watermelon salad

  • Step 1
    Place watermelon cubes in a large bowl. Whisk olive oil, lime juice and vinegar in a small bowl and pour over watermelon. Toss to coat. Add salt and pepper to taste. Gently stir in feta cheese and mint/parsley. Serve salad immediately in a watermelon wedge shell.
