A fresh, yummy apple salad perfect for spring and refreshing in the summer too!

Ingredients

  • 4 cups peeled and diced apples
  • 1/2 cup sugar
  • 8 ounces canned crushed pineapple and juice (separated)
  • 8 ounces tub cool whip
  • 1 tablespoon flour
  • 1 - egg - slightly beaten
  • 2 teaspoons apple cider vinegar
  • 3/4 cup chopped walnuts

How To Make taffy apple salad

  • Step 1
    Mix flour, sugar, pineapple juice, egg and vinegar in a small saucepan. Stir over medium heat until thick. Be careful not to scramble the egg. Tiny bits won't matter.
  • Step 2
    Refrigerate until cold. (I put it in a shallow dish and put in the freezer for several minutes.)
  • Step 3
    In the meantime, peel, core and chop apples. When your mixture is very cool, pour over apples, crushed pineapple and nuts, and fold in Cool Whip. Stir and chill at least 1 hour before serving.
