This yummy and refreshing salad goes well with a breakfast or brunch. It is also a big hit at potlucks! Most of the preparation is done the day before serving.

What's better than a fresh fruit salad in the summer? A creamy fruit salad! The pineapple cream cheese dressing in this salad is simply wonderful. It's tangy, sweet, fruity, and very creamy. This is sure to be a crowd-pleaser at any summer cookout. And a way to get little ones to eat their fruit.

Ingredients

  • PINEAPPLE CREAM CHEESE DRESSING
  • 1/3 cup sugar
  • 4 teaspoons corn starch
  • 1/4 teaspoon salt
  • 1 cup pineapple juice
  • 1/4 cup orange juice
  • 2 tablespoons lemon juice
  • 2 - eggs, lightly beaten
  • 2 packages cream cheese, softened (3 oz. each)
  • FRUIT SALAD
  • 2 cups fresh strawberries, sliced
  • 2 cups pineapple tidbits
  • 1 1/2 cups seedless green or red grapes, halved
  • 1 1/2 cups peaches or nectarines, diced
  • 1 cup fresh blueberries or raspberries
  • 1/4 cup sugar
  • - leaf lettuce, optional

How To Make summertime or anytime fruit salad

  • Sugar, corn starch, salt, and juices in a saucepan.
    Step 1
    The day before serving, in a small saucepan combine sugar, corn starch, and salt. Stir in the juices until smooth.
  • Mixture brought to a boil.
    Step 2
    Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Mixture removed from the heat.
    Step 3
    Remove from heat.
  • Adding a small amount to the eggs.
    Step 4
    Stir a small amount into the eggs. Return all to the pan, stirring constantly.
  • Cooking until 160 degrees.
    Step 5
    Cook and stir until mixture reaches 160 degrees and is thickened. Remove from heat and cool slightly.
  • Beating cream cheese until smooth.
    Step 6
    In a small mixing bowl, beat cream cheese until smooth.
  • Juice mixture added to the cream cheese.
    Step 7
    Add juice mixture; mix well.
  • Ready to chill the sauce.
    Step 8
    Cover and refrigerate overnight.
  • Fruit and sugar stirred together.
    Step 9
    In a large bowl, combine the fruit. Sprinkle with sugar; toss to coat.
  • Ready to chill the fruit.
    Step 10
    Cover and refrigerate overnight.
  • Tossing the fruit and dressing.
    Step 11
    Just before serving, combine dressing and fruit and toss lightly. Can garnish bowl by lining it with lettuce.
