strawberry spinach salad

Ingredients
- 10 ounces spinach, fresh
- 2 cups strawberries, sliced
- 1/2 cup sliced red onion
- 1/3 cup lemon juice, fresh
- 3 tablespoons sugar
- 1 tablespoon canola oil
- 2 teaspoons grated lemon rind
- - black pepper, freshly ground to taste
- 12 cups sliced almonds
How To Make strawberry spinach salad

Step 1Add sliced strawberries to spinach in a medium bowl. Cut thinly sliced onion into bite-size pieces, and add to strawberries and spinach. Place cover on bowl and refrigerate.

Step 2First grate or zest lemon rind. Then juice lemons to make 1/3 cup. Add sugar and oil to lemon zest and juice. Refrigerate. Just before eating add almonds and lemon vinaigrette to spinach salad, and toss. Serve immediately.

Step 3Leftovers can be taken for lunch the next day if you add dressing only to portion you are eating. Otherwise, the strawberries break down.
