When I first saw this at a luncheon at work I thought, OMG that looks weird, but it is one of the best things I have ever eaten (and I am not a lover of Strawberries). I asked my co-worker for the recipe. I have made it for all of my friends. It is now the most requested dish I make.

I will post a picture next time I make it.

Ingredients

  • 1/2 c
    mayonnaise
  • 1/4 c
    whole milk
  • 2 Tbsp
    white wine vinegar
  • 2 Tbsp
    poppy seeds
  • 1/3 c
    sugar
  • 1 pkg
    spinach, fresh
  • 1 pt
    strawberries
  • 1/2
    sweet onion

How to Make Strawberry Spinach Poppyseed Salad

Step-by-Step

  1. The dressing is best after sitting in fridge overnite. Combine the mayo, milk, vinegar, poppy seeds, and sugar.
  2. Toss spinach, stawberries, & onion.
  3. Just before serving pour dressing over salad and toss lightly.
  4. ENJOY!
